Easy Homemade Butter Pound Cake
Ingredients
Cake flour 200g
Baking powder 1tsp
Unsalted butter 200g
Eggs 3 pcs
Sugar 170g
Salt 1/2 tsp
Milk 50ml
Vanilla extract 1/2 tsp
Instructions
1. Combine flour, salt and baking powder. Set aside.
2. Place softened butter into a large mixing bowl & beat until smooth
3. Stir sugar into the mixing bowl (2.) until pale & fluffy
* Tips : Adding the sugar a little bit at a time helps get a perfect creamed butter & sugar
4. Beaten eggs into the bowl, stir well and add eggs into the mixing bowl (3.)
* Tips : Adding beaten eggs one by one to give the mixture time to thicken and emulsify
5. Add vanilla extract into the mixture (4.)
6. Sift the flour mixture (1.) into the mixing bowl (5.)
7. Use a rubber spatula to scrape the mixture off the sides of the bowl and mix together until just combined
* Tips : Do not overmix the batter, the gluten in the flour can form elastic gluten strands resulting in a more dense, chewy texture
8. Finally, add milk to the mixture (7.). Stir well
9. Transfer the cake mixture to the load tin
10. Flatten with a spatula. Preheat oven to 180°C / 356°F. Bake for 20mins then take it out.
* Tips : Cutting a line in the middle, you'll get a beautiful crack on the surface
11. Put it back to oven & bake for another 20-25mins
